antipasta - canning


      Chop by hand:

      2 tins black olives
      2 jars stuffed green olives
      1 head cauliflower
      2 jars small pickled onions
      5 assorted banana peppers
      6 tins of shrimp
      2 tins of solid tuna
      4 medium bottles of ketchup
      1 cup vinigar
      11/2 cup olive oil
      3 tins of mushrooms

      Put oil, cauliflower, onions and olives in a large pot and bring to a boil. Boil for 5
      minutes. Add mushrooms, peppers and ketsup and boil for an additional 5 minutes.
      Add remaining ingredients and blend well. Bring to a boil and boil for 5 minutes.
      Pour into sterile jars and process in canner for 10-15 minutes.

      P.S. I buy large jars or cans of the above items to save money.
