Cherry Almond Jam

5 cups pitted chopped sour cherries

4 cups sugar ( if your cherries and REALLY sour use 5 cups )

1 pkg Sure Jell ( for lower sugar )

2 tabl spoons vanilla

1 to 2 tablespoons almond extract

Follow the directions for in the pectin box. Just before you can it, add the vanilla and almond extract. Stir it in for about 30 seconds to make sure that the flavor goes through the entire batch and can it. *Note - always add spices or extracts last as they will lose potency if cooked too long.
