       The Cranberry, Currant, Horseradish relish sounds delish! Please post.
       In the meantime, Elaine, here is the relish recipe I mentioned. As you can see, not a whole lot of lime juice. I'm thinking about getting some PH test strips. If it's high enough, maybe I'll chance canning it.


       4 cups frozen or fresh cranberries
       (Pulse 5 times in food processor)
       4 tsp. grated fresh ginger
       2 jalapeno peppers, seeded and chopped
       1/2 cup chopped red onion
       4 TBS fresh lime juice
       4 seedless oranges, sectioned, with juice
       4 stalks celery, chopped
       1 cup sugar

       Combine. Put in refrigerator for a couple of days before serving.

With the high acidity of the cranberries and the little hit of lime juice, I think it would be perfectly safe to can using BWB  method. I am going to try this... it sounds delicious!!!
