Use for all those green bean we put up...
Green Bean Cakes:
about 20 oz green beans, cooked & drained
1/4 Cup flour
1/4 teaspoon salt
1/2 Cup milk
2 Tablespoons butter or margarine
Place beans, eggs, flour, salt & milk in processor on chop for a few seconds, then on medium for a few seconds more.
Melt 1 tsp butter on griddle or in fry pan. Pour a small amount of batteronto the griddle to make cakes about 2 1/2" in
diameter; fry a little slower than regular hot cakes. Serve with the whipped butter on top.
To make them a little more interesting, you can make them 5" in diameter, making them as flat as you can, like crepes &
put a filling of creamed chicken, ham or sausages in the middle.
