20 Med. Pears

4 Cups sugar

1/3 cup orange juice

1 tsp. grated orange peel

1/2 tsp. nutmeg

Wash and quarter pears. cook until soft, adding only enough water to prvent sticking (1/2 cup). Press through sieve or food mill. Measure 2 quarts pear pulp.

Combine pear, sugar in lg. saucepot, stirring to dissolve surgar. Add remaining ingredients. cook until thick enough to round up on a spoon. Stir frequently to keep from burning. Ladle hot butter into hot jars, leave 1/4 " headspace. Adjust likds. Process for 10 minutes in boiling water bath. Makes 4 pints. Ball Blue Book
