Here is a super easy and absolutely delish recipe for pumpkin pie.
For one 9" pie:
One homemade or frozen deep dish 9 inch pie shell
1/2 28 oz. can PURE PUMPKIN (don't use the pumpkin pie filling)
1 cup packed brown sugar
1 tsp cinnamon
1/2 tsp EACH ground nutmeg, ground ginger and salt
3/4 cup evapourated milk
Beat eggs lightly in a medium bowl. Add pumpkin, sugar, cinnamon, nutmeg, ginger and salt and stir until well
combined. Blend in milk. Pour into pie shell and bake at 425 degrees 15 minutes. Reduce oven temp to 350 degrees
and continue baking 30 to 35 minutes or until a knife inserted comes out clean.
Hope you like it! I double this recipe and make one huge pie which takes about 40 minutes at 350.
