Spiced Pear Butter

                            4 lbs pears
                            1/2 cup dry white wine
                            2 tbsp lemon juice
                            1 1/2 cups sugar
                            4 orange slices
                            1 lemon slice
                            4 whole clove
                            1 vanilla bean split lengthwise
                            1 cinnamon stick
                            1/2 tsp ground cardamon
                            pinch of salt

                            Combine pears, wine and lemon juice in large heavy sauce pan. Cover and simmer until pears are soft,
                            about 25 min. Puree with liquid. Return to pan, add remaining ingredients. Stir over low heat until sugar
                            disolves. Increase heat to medium and boil gently until thickened, about 50 min. Ladle into hot jars and
                            bwb 10 min. Good over ice cream, or on toast.
