7 #s cucumbers or green tomatoes

6 med onion\

1 tblspoon ea: allspice, whole clove, mustard

seed, black peppersorn, celery seed

1/2 lemon, sliced

2 sweet red peppers

1 cup light honey

3 cups vinegar

Wash & trim the cucumbers or tomatoes. Slice about 1/4" thick. Slice the onions & peppers the same way. Place on top of ice in a bowl & leave several hours in the fridge, covered with plastic wrap. Begin to heat the water for the boiling bath. Tie the spices into a spice bag & place in a kettle with the vinegar & honey. Bring to a boil then add the lemon & veggies. Simmer about 5 min. or until just tender, yet still crisp. Remove spice bag, pack veggies into hot jars & cover with the boiling liquid leaving 1/2" headspace. Put on lid & process for 10 minutes.
