      With some people buying from the farmer's market and some thinking about canning meats now, I thought some people
      might like to see this information that I found in my Grandmother's 1961 University extension of MO canning book.

      Approximate yield of canned goods from fresh

      FOOD lbs per Qrt Approx wt. fresh canned
      apples 2 to 3 lbs bushel 48 lbs 16/22
      green beans 2 to 3 lbs bushel 30 lbs 12/22
      berries 1 to 2 qrt box 24qrt crate 36lbs 11/24
      peaches 2 to 3 lbs bushel 48 lbs 16/25
      pears 2 to 3 lbs bushel 50 lbs 16/30
      tomatoes 2 to 3 1/2 lbs bushel 53 lbs 14/22
      beef & pork (w/o bone) 2 to 2 1/2 lbs per pint
      beef & pork (w bone) 1 1/2 to 2 lbs per pint
      chicken (w/o bone) 3 to 3 1/2 lbs per pint
      chicken (w bone) 4 to 5 lbs per QUART

      The exact yield depends on quality, variety, and maturity of fresh produce. Also depends on way product is trimmed, cut, and packed.
