"Mock apple butter using zucchini

4 cups zucchini puree

6 T. vinegar

3 T. lemon juice

2 cups sugar

1 tsp. cinnamon

Dash of allspice

Peel and remove seeds from large zucchini squash; cgio ciarkekt; put in blender with vinegar; blend until smooth. Pour into oven-proof dish' add remaining ingredients; mix well/ bake in 359 to 375 degree oven, stirring occasionally until desired thickness. This may be cooked in a saucepan on a stove top, but requires closer watching as it sticks easily as it thickens. Cool and chill. Or you can pack it while it's hot into sterilized jars and water bath for 10 min. I got this from another site and it sounds very good for those who have a lot of zucchini. This can be added to the archives as me sending it but it's a copied recipe. Thanks Diana
